Amaranth gets its name from the Greek word “amarantos,” which means “everlasting.”
True to its name, this “ancient grain” has been cultivated for at least 8,000 years…
Most notably by the Aztecs of Mesoamerica, for whom it became a staple food (and a religious offering).
But after the Spaniards conquered South America… somehow amaranth’s reputation went DOWN THE DRAIN…
And from then on was called “pigweed“!
It wasn’t until the 1970s that scientists in this country took another look at amaranth… and began to understand why it had been so TREASURED.

But that’s not all.
In India, amaranth is known as “rajgira”… which means “royal grain“…
And the ancient medicinal practice of Ayurveda embraces the consumption of this superfood by diabetics.

Those “broken down” pieces, of course, are sugar molecules.
If your body gets MORE sugar than it can use for energy, it STORES it in your liver… fat tissue… and blood.
Alpha-amylase inhibitors BLOCK the metabolism of carbs altogether – so they DON’T get converted into sugar.
Now, in the plant kingdom, amaranth is technically a “pseudocereal.” Its “grain” is actually a seed!
