Serve it up, nice and hot…super healthy rhubarb pie
There doesn’t seem to be much middle ground when it comes to rhubarb pie. People tend to love it or hate it.
But wherever you stand, rhubarb piewise, here are four quotes that just might make you hungry for a warm slice…
QUOTE ONE — From HealthDay News: “Researchers found that baking British garden rhubarb for 20 minutes dramatically boosted levels of anti-cancer chemicals called polyphenols. Previous research has shown that polyphenols selectively kill or prevent the growth of cancer cells.”
QUOTE TWO — From a study in the American Journal of Clinical Nutrition: “Polyphenols are the most abundant antioxidants in the diet.”
QUOTE THREE — From the same study: “Current evidence strongly supports a contribution of polyphenols to the prevention of cardiovascular diseases, cancers, and osteoporosis and suggests a role in the prevention of neurodegenerative diseases and diabetes mellitus.”
QUOTE FOUR — From Garrison Keillor (of Prairie Home Companion fame): “But one little thing can revive a guy, and that is homemade rhubarb pie.”
Garrison obviously knows what he’s talking about.
